Rice Pudding

(Arroz con Leche)

1 cup rice
3 cups water
2 cans sweetened condensed milk
1 cinnamon stick
Peel from half an orange
1/2 cup raisins
Ground cinnamon to sprinkle on top before serving

Cook the rice in the water with the orange peel and cinnamon stick for 15 minutes until the rice is well cooked.  Remove from the flame and remove the cinnamon and peel.  Add the cans of milk and bring to a boil over low flame, constantly stirring with a wooden spoon for 5 minutes.  Add raisins and boil 3 minutes more.  Serve warm, dusted with cinnamon.

Serves 4.
