Peanut Butter Sauce on Rice

1/2 cup onion, chopped
2 cloves garlic, minced
1-3 tablespoons oil
1 pound beef, cubed
3/4 cup natural peanut butter
2 1/2 cups water
1 small can tomato paste
1 1/2 teaspoons salt
1 tablespoon parsley, chopped
1 tablespoon chives, chopped
1-2 cups potatoes (or pumpkin), cubed
Brown onion, garlic, and beef in the oil. Add 1/2 cup of water and peanut butter, then mix well. Add the rest of the water, tomato paste, salt, parsely, chives, and potatoes. Boil for 15 to 20 minutes, stirring often, until oil rises to top and sauce is slightly thick. Serve over rice.
Serves 8-10.
