Ginger Water
(Ndian Dyindyan)
West Africa
2-3 large fresh gingerroots, peeled and pounded into a pulp
16 cups water
6 drops yellow food coloring
3 drops red food coloring
2 cups sugar
Combine the ginger pulp and water then let stand overnight. Strain, then add the food colorings and sugar. Pour carefully into little baggies and knot the tops so that no air remains with the water. Place in freezer. Serve partially thawed or fully frozen. To drink, bite a small hole in the bottom corner of the plastic bag and suck the ginger water out.
Makes 1 gallon.
