Rice Pudding Bengali-style
(Firni)

1/3 cup uncooked jasmine or basmati rice
2 cups water
1 cup milk
1/3 cup raisins
2 bay leaves
2-4 sticks cinnamon, broken into pieces
4 whole cardamoms (green)
1/2 teaspoon salt
1/4 cup grated coconut (optional)
Raisins and thinly-sliced toasted almonds for garnish
Boil rice in water until rice is just soft. Add remaining ingredients and cook on low, stirring occasionally about 20 minutes until desired thickness. Allow to cool slightly and serve or pour into serving bowls. Garnish with raisins and almonds before serving.
Serves 6.
