Fried Puffed Rice
(Muri Badji)

2 tablespoons cooking oil (soybean or vegetable)
1/4 cup chopped red onion
1/2 teaspoon grated fresh ginger
1/2 teaspoon chopped fresh green chili
(adjust to taste; remove seeds for less heat)
3 cups puffed rice (Rice Krispies)
1 tablespoon chopped fresh cilantro or mint leaves
Salt to taste
In deep frying pan, heat oil on medium-high heat and sauté onion. Add ginger and chili and fry for 1-2 minutes. Add the puffed rice and cilantro leaves and stir-fry for 2 more minutes. Serve hot.
Optional: Along with the rice and cilantro, add 1 cup of peanuts, chashews, almonds, or raisins.
Serves 6-8.
