Peanut Sauce

(Maafe Tigadege)

West Africa

1/2 cup chopped onion
2 cloves garlic, minced
1-3 tablespoons oil
2 1/2 - 3 1/2 cups water
1/2 cup peanut butter
2 tablespoons tomato paste
Salt and pepper and/or hot pepper to taste

Brown onion and garlic in the oil.  Mix 1/2 cup water, peanut butter, and tomato paste separately and then add to pot.  Gradually add the rest of the water until the desired consistency is reached.  Taste and adjust with salt and pepper accordingly.  Serve over rice.

Serves 6-8.
