Fish in Coconut Milk

Guam

2 pounds of fish
1/4 cup vinegar
1 medium onion, sliced
1/2 cup water
2 cloves garlic, crushed
1 medium green pepper, sliced
1 1/2 cups thick coconut milk
Salt and pepper to taste
Place all ingredients except coconut milk into skillet. Cover and cook for 20 minutes. When meat is soft, add coconut milk and serve over rice.
Serves 6-8.
