Donut Holes
(Cruchades)

Niger
Henry & Ardell Persenaire-Hogeterp
2 cups water or milk
2 1/2 teaspoons sugar
2 tablespoons water or milk
1/2 cup corn flour
2 teaspoons rum or lemon juice
3 teaspoons powdered sugar
Boil 2 cups of water or milk together with the sugar. While waiting for the liquid to boil, add 2 tablespoons of water to the flour and mix into a smooth paste. Once the liquid has boiled, add to it the flour mixture. Lower the fire and bring to a gradual boil; all the while scraping the sides of the pan with a spatula every five minutes. Add the rum or lemon juice. Let mixture cool. It should be nice and thick. On a floured surface, make the flour mixture into small balls and flatten them with your palms. Deep-fry the balls in oil until nicely brown. Remove and serve warm with powdered sugar if desired.
