Prickly Pear Salad

(Nopal Salad)

1 quart jar prickly pear cactus (Nopales can be found in Latino markets or
      Latino sections of local grocery stores)
4 tomatoes, cubed
1 or 2 chilies or jalapeños, diced very small
Juice from 1 lemon
3 tablespoons vinegar
1 bunch of cilantro, chopped fine
1 avacado, sliced

Drain the nopalesIn a large salad bowl add the nopales, tomatoes, jalapeños, cilantro, lemon juice, and vinegar.  Mix well.  Lay the avacado slices on top to decorate.  Serve cold.

Serves 4-6.
