Plaintains with Cheese

(Tostones con Queso)

3 plantains, peeled and cut into 8 inch-long pieces
2 cups oil
1 pound cheese, cut into cubes or shredded
Salt to taste

Fry plantains in oil until fruit is slightly browned then crush with a glass bottle against a hard surface.  Fry again until all the fruit is brown.  Blot excess oil from plantains on paper towel.  Place plantains on serving dish and sprinkle with salt.  Place cheese on hot plantains and serve immediately.

Serves 6-8
