Spinach and Peanut Stew

2-4 tablespoons vegetable oil
1 onion, finely chopped
2 tablespoons butter
1/2 cup chopped peanuts
1 tomato, chopped
1/4 cup tomato paste
3 cups tightly packed, finely chopped spinach
1/4 teaspoon ground red pepper
Salt and pepper to taste

Sauté the onion in the oil until tender.  Reduce the heat to medium and add the butter, peanuts, tomato, tomato paste, spinach, red pepper, and salt and pepper.  Cover and cook for about 30 minutes, stirring often.  Serve over rice.

Serves 8-10
